Pineapple cream

Quick and easy dessert.
Serves: 6-8
  • 1 ¼-ounce envelope gelatin
  • ¼ cup cold water
  • 1 14-ounce can sweetened, full cream condensed milk
  • ¼ cup fresh lemon juice
  • 1 8-ounce can crushed pineapple
  • 1 cup heavy whipping cream
  1. Sprinkle the gelatin over the cold water and set aside for about 3 minutes, to sponge.
  2. Clarify the gelatin over boiling water or in the microwave. See Notes and images.
  3. Mix together the condensed milk and lemon juice until thickened.
  4. Stir in the entire can of crushed pineapple (with juice). Set aside.
  5. Whip the cream until stiff.
  6. Add the gelatin to the pineapple mixture and fold in the cream.
  7. Scrape into a suitable bowl and refrigerate for at least an hour before serving.
To clarify gelatin, place the bowl over a small saucepan of hot water (boiled and turned off) and cover with the lid of the saucepan. It will take 8-10 minutes to clarify without being heated to boiling point. In a microwave, it will take 20-30 seconds to clarify but will be very hot. Clarified gelatin is quite clear.
